Grapes: 100% Chardonnay.
Vineyards: the grapes come from vineyards located in different municipalities of Franciacorta, representing all the different landscape units that characterize the area.
Plant density: 6000 ceppi/ha.
Yield per hectare: 60hl/ha.
Harvest: manual with grapes selection and transport in small boxes beginning from the first decade of August.
Vinification: soft pressing of the grapes fermented in steel tanks at controlled temperature (16 °C). Cold decanting static. Inoculation with selected yeasts.
The first 8 months of aging in steel. Bottle ageing on leaven for a period of about 55 months in cellars at a constant temperature of 12-15 ° C.
Alcohol: 12.5% vol.
Temperature: 6 °C (44 °F).
Description: a wine with a great personality. The style is
played on the balance between taste and complexity.
The nose opens with intense notes of dried fruit, bread crust
and dried flower bouquet in harmony with the evolving notes dictated by the period on leaven. On the palate you can clearly feel the tropical hues, the toasted and the dried fruit notes typical of the complex Chardonnay. The nasal scents return and remain pleasantly long, almost round in the mouth.
The aftertaste is constantly diversity and finesse, with a strong sugar content (6.5 grams per liter) but well blended with acidity.
Matches: Beautiful Franciacorta for refined aperitifs, perfect with white fish sauce pastas, enveloping with char and whitefish, ideal with lightly spicy white meat.
