Training system: Guyot and spurred cordon.

Harvest: Grapes are harvested by hand during the first ten days of August and transported in small boxes.
Winemaking process: Soft pressing of the grapes, followed by fermentation in stainless steel tanks at a controlled temperature of 16 ° C. At the second fermentation, the base wine intended for Satèn is given a lower amount of sugar in the liqueur de triage compared to brut (18g/l vs 24g/l of brut); this results in a less sparkling wine, but with finer bubbles and a more delicate flavor. The wine aged on the lees for a minimum period of 24 months in cellars at a constant temperature of 12-15 ° C.
Description: Straw yellow color and fine perlage. Delicately floral. The taste is soft and delicately creamy, nuanced but distinct scent of ripe fruit, accompanied by subtle notes of white flowers and nuts, possibly even roasted (almonds and hazelnuts). The wine’s pleasant flavor, freshness and softness are reminiscent of delicate silk.

Serving Suggestions: great with aperitifs and throughout the meal. It will perfectly go with main and second courses based on fish and vegetables, raw fish, fried fish and vegetables, mixed cold pork meats, white meat, and ripe cheese.
