Grapes: Chardonnay (65%), Pinot Nero (35%).
Vineyards: the grapes come from vineyards located in different municipalities of Franciacorta, representing all the different landscape units that characterize the area.
Plant density: 6000 ceppi/ha.
Yield per hectare: 60hl/ha.
Harvest: manual with grapes selection and transport in small boxes beginning from the first decade of August 2012.
Vinification: soft pressing of the grapes; fermentation in steel vats at controlled temperature (16 °C). The skins are separated from the must throught a cold temperature static decanting method. one selected yeast is inoculated, the wine stays for 8 months in stainless, before being bottled. The wine then goes throught second fermentation and it stays on the lees for at least 54 months at a constant temperature of 12-15 ° C.
Alcohol: 12.8% vol.
Temperature: 6 °C (44 °F).
Description: A Franciacorta that develops “insé” (“in sé” meanings “by itself” in Italian): nothing is added to its integrity and authenticity typical of a pas dosé. In the glass is shows a unique complexity whit dinstict aromas: the sweetness of honey, the freshness of thyme and aromatic herbs, the elengance of delicate hints of vanilla and toast. On the palate it shows the integrity without compromise of a pas dosé combined with the balance of a great Franciacorta: structure and finesse.
Matches: The ideal pairing is with selfish or salt – or fresh water fish. It also pair well with traditional charcuterie or soft cheese, savory and rich.
