E dal Veneto approda in Franciacorta, determinato a produrre vini di qualit\u00e0 interpretando al meglio il territorio, cogliendone i caratteri peculiari e la tipicit\u00e0 dei suoli per farne un'area di eccellenza. Federico crede nella qualit\u00e0 come dote imprescindibile per la creazione di un prodotto che duri nel tempo. Pur non avendo una tradizione di famiglia alle spalle nel campo enologico \u00e8 animato dalla\u00a0passione e decide di scommettere nel progetto di Corteaura investendo tutte le sue risorse. E il presente gli sta dando ragione.\r\n\r\n&nbsp;\r\n<h3>Pierangelo Bonomi<\/h3>\r\n<h4>L'esperienza.<\/h4>\r\nAnni di lavoro nel campo della spumantizzazione tra la Franciacorta e il Trentino testimoniano quanto per Pierangelo Bonomi le bollicine siano una missione.\r\nIl Franciacorta indica tradizionalmente un metodo di lavorazione classico (prevede la rifermentazione in bottiglia), una DOCG molto importante (dotata di un rigido disciplinare), e un vino (i vitigni utilizzabili sono chardonnay, pinot nero, pinot bianco con 7\/8 mesi di prima fermentazione dalla data della vendemmia e con almeno 18 mesi di lenta fermentazione a contatto coi lieviti).\r\nMa come consulente tecnico per Corteaura, Pierangelo Bonomi ha un progetto molto ambizioso che pu\u00f2 essere definito in tre punti:\r\n<ul>\r\n \t<li>un lavoro mirato alla Costanza Qualitativa (attraverso ricerca, struttura e formazione)<\/li>\r\n \t<li>la tutela dell'identit\u00e0 del territorio di appartenenza, pur mantenendo le differenze di gamma (Brut, Sat\u00e8n, Ros\u00e9, Pas Dos\u00e9)<\/li>\r\n \t<li>la produzione di Franciacorta facili da bere ma strutturati e complessi nella loro architettura.<\/li>\r\n<\/ul>\r\nPer rendere possibile questo ha scelto, in piena sintonia con Federico Fossati, di prolungare l'affinamento sui lieviti stabiliti dal Consorzio della Franciacorta per creare cuv\u00e9e longeve e di grande espressione che possano incontrare il gusto del consumatore.
